What could be better on a cold winters night than a rich hot chocolate with foamed milk and some flakes of chocolate on top? To create this wonderful concoction you need a way to make delicous milk froth.
There’s a variety of ways of doing this, the simplest way is to use a milk frothing jug. This is a metal pitcher, normally about half a litre capacity, with a plunger on top. You put some hot milk in the jug and then ram the plunger up and down vigourously to aireate the milk and create froth.
I suggest you avoid those small battery powered whisks, they seem to spray the milk everywhere, make a huge mess, lots of noise and not much froth! A milk frothing jug doesn’t cost any more and is much more effective.
I find this works really well as long as the milk is nice and hot, like about 80 Degrees Celcius. My girlfriend loves to drink hot chocolate and I’m often asked to make one from scratch, so much better tasting than using a ‘just add water’ packet.
For a delicous rich chocolatey flavour I like to use Green & Blacks cocoa powder and a Demerera sugar. You can use a a muscavado sugar but some people have told me that this overpowers the taste of the chocolate. Add as much rum as you feel necessay!
I start by putting 1 teaspoon full of coca powder into a mug, followed by 2 teasspoons of sugar. I then add a dash of milk and stir the contents so it forms a thick paste. This is an important step, if you just add all the milk now the powder will form lups that are really hard to get rid of. And no one wants lumpy hot chocolate right?
Next I add the rest of the milk and give it a good stir. If I have a microwave I’d use that, otherwise I use the milk frother jug directly over the stove flame.
When it’s heated through to the temperature you like I pour it into a mug. To create the froth is easy, you can either leave about 2cm of the hot liquid in the bottom of the frothing jug and areate that. Or you can use some more milk, heat it up a little and froth it. This option means that you can try som latte style art on top, at the froth will be white and makes a nice contrast against the dark brown of the hot chocolate.
